Nutty Noodle Salad

There are so many ways to eat noodles. But this is one of the ways that is least explored and not as readily available when eating out. Yet this dish packs a load-ful of nutrients with all the colours and goodness tossed together.

Noodles will never taste the same again.

Almond butter dressing: (serves 2)
• 1 heaped tbsp almond butter
• 2 tbsp tamari/ soy sauce
• 1 tsp siracha/ chili sauce
• Juice of 1/2 a lemon/lime
• 1 tbsp rice vinegar
• 1 tbsp miso
• 1/2 tbsp sesame oil
• 1 tsp grated ginger
• 1 tsp grated garlic
• Salt and pepper to taste
• Honey if needed

Noodle salad:
• 100g of soba noodle, cooked (replace with kelp noodles or any other noodle you fancy)
• 1 cup of salad leaves (kale, spinach, herb blend)
• 1/4 cup cooked corn
• 1/4 cup cooked peas/edamame
• 1/4 cup shredded cabbage
• 1/2 a cucumber, julienne
• Sautéed mushrooms ( shitake, oyster, button)
• Shredded carrots
• Bell peppers
• Cherry tomatoes, halved
• Toasted nuts, sesame seeds
• Coriander or mint leaves for garnish

Toss them all together and enjoy!
